A lot of people are interested in the things, what we are doing. To organize to spread the experience and knowledge we developed a weekly program, where everybody can take part in the time from 10am to 4pm.
Monday – Batak cooking without oil
The traditional Batak Cuisine is working without oil. We will cook:
- Ikan Arsik
A Batak Fish Bowl with fresh fish from the lake with a lot of spices, but not spicy. The most is lemon grass and Turmeric - Ikan Nanjura
The Batak Sushi. Fresh fish getting marinated with lemon juice to get soft. Creating a sauce based on Candlenut. Also not spicy - Ayam Napinadar
A dish from our own chicken. First it is getting barbecued, then it is getting fried with a spicy sauce. This can get really spicy.
In the afternoon we look in the garden for the spices we used.
Tuesday – Processing and testing our herbal teas
Mostly in Indonesia the people drink black tea from huge plantations. They have to get treated with chemicals and then the tea is getting packed in chlorinated tea bags. But herbal teas from an organic garden have much more health benefits. We produce in the moment already more then 20 different herbal teas. We are sure, we can make more then 100 different teas. You learn, how to collect and to prepare the tea. Part of the program is:
- Walking through our garden to look for the herbs
- harvesting herbs
- prepare the leaves for drying
- packing the tea
- Testing all our teas
- Learning about the health benefits.
Wednesday – Processing Candlenut Oil
Cold pressed Candlenut Oil is getting used for Hair Treatment, Sun Protection, Skin Care, Neurodermitis, Psoriasis, Athlete’s foot and more. It is important to process the oil with a cold press to keep the active ingredients. You take part in the production from:
- Collecting the nuts
- opening the nuts
- pressing the nuts
- selecting the pure clear oil
- packing the oil
- preparing the candlenut creme
- roasting the oil cake to use it for cooking.
Thursday – Process the full grain rice until Lapet and Hinopingan (Batak Cake)
You go inside of the old way of Batak Food processing. You will learn to unhull the rice in a old traditional stone mortar. You will then go on with the stone mortar until the rice is getting powder. Out of this and other ingredients you will learn to prepare the Hinopingan and to make Lapets. It takes a long time and is making fun, if a group of people is doing it. It will the then not so hard to make it and it will make then really fun to create a cake without cooking.
Friday – Pizza-Sauna
We have been the first to have the idea to make on top of a Pizza oven a Sauna cabin. The oven is made out of Clay, the cabin out of our Candlenut Wood – the best for a Sauna construction! The Sauna is more like a Bio Sanarium. In the tropics you cannot go up to high temperatures, because of the humidity it will be to hot. But you will sweat out a lot. Also you can make the Sauna wet. We provide our candlenut cream for a body srubb in the Sauna. On top we provide Cinnamon branches, which you can use like in a Banja.
After Sweating you just jump to the lake, you can relax at the beach. We serve you fresh fruit drinks and herbal teas. On top, you can try our Mango Spirits.
You can design your own pizza, which we bake then in the hot oven for you. We serve it with Fresh Salad from our farm with a dressing of our Mango Vinegar.
The event is open end…. You can stay until the late evening and go on and on and on……
Saturday – Coffee and Coklat
On Samosir is growing a lot of Coffee and Cocoa. We have around 50 Cocoa Trees at our land. Mostly some of them can be harvested. We will do this with you together, you can try the fruits. Then we show you the fermentation and drying of the Cocoa beans. The dried beans we will roasting and peeling them. From the chocolate skin we will prepare a healthy tea. The beans then we will grinding and prepare a chocolate cream.
Our coffee comes from the hills of Samosir. We have the dried beans here. This we will roasting in a wok.
Sunday – Wine Making and Distilling
You get explained the making of Fruit wines. You will go inside of the determination of Quality of Wines. We will test the Alkohol of the wine and the spirits. It depends on the time, you are coming, what steps of the wine making we directly can do. You get a testing of a lot of our spirits.
The whole day we are going for distilling. You can try the distillates. We explain you the difficulties and we make a lot of testings. Also we will test for Methyl alcohol.
After this day, you will know, how to make fruit wines and how to distil.
In between we will serve you all the time fresh bread to neutralize your taste.
In all the day package are included:

- Buffet lunch
